 These are some things I found when creating the List that I think are good ideas, but I don't have the ability or inspiration to write. Anyone is free to do whatever with them.

X-Men AU: Dark Rogue

When Rogue steals people's powers, she also gets some of their personality.

SAO AU: Kirito Overhaul

Kirigaya Kazuto is severely injured in an accident and permanently loses use of his legs. As Kazuto and his family struggle to adjust to his paraplegia, Minetaka (his uncle/adoptive father) becomes obsessed with perfecting virtual reality for him, and Kazuto is involved in many stages of testing the Nerve Gear. This is both part of what gives him his edge over other players and a more interesting secret for him to hide than being a beta player -- along with the fact that he's not sure if he wants to go back to the real world despite all the danger of SAO. Minetaka is the final boss instead of Kayaba Akihiko.
